I used to not like meatloaf. Then I tried my sister-in-law, Sally's recipe. I think she got it from her husbands grandma. This recipe really is good enough to be a generational recipe that gets handed down. It has a tiny bit of a spicy kick to it depending upon on spice in the Wild Green Chile Salsa that you choose. But the mashed potatoes calm the spice down a bit. None of my kids or Sally's six kids think that this meal is spicy. But everyone- gets seconds. Make sure you save at least half of the mashed potatoes for Fridays quick dinner.
