Taco Salad is one of my very favorite meals. I don't know why but even as a little girl I loved the taco salad shell and the ground beef. And I wasn't big on meat as a kid! This recipe comes together so nicely and using Mama Bears Hamburger you have the added nutrition of zucchini, peppers and carrots without even affecting the taste. It really saves time if you have a pound of Mama Bears Hamburger sitting in your freezer. If you don't have a stockpile- I encourage you to make a stockpile this week. I promise it will save you time on the busy week nights. You can purchase the Taco Salad shells from a local grocery store (non-chain) or you can even buy them from fast food restaurants. You could probably even figure out how to make them at home. Worst case scenario, you can use tortilla chips. No matter what you do- tonight's meal is going to be delightful!
