If I am not your best friend your crockpot should be. This meal is so easy and the ingredients actually last for 2 meals. You'll love it! Don't forget to reserve half the rice and beans for Thursday and 2 cups of the sweet pork for enchiladas. This is not quite the same as the Dr. Pepper pulled pork, but it has an incredible flavor that is just as good. The recipe for the sweet pork does call for 2 cups of brown sugar- but you know me- I lessen it and do about 1 1/4 cups brown sugar and it still has the sweet taste. So yummy! If you have even more leftovers, this meat freezes super well.
