This dish is so good you will want to lick the pan. Seriously you will. The one tip is that make sure you cut the zucchini into noodles 24 hours before you are going to bake it. If you cut the noodles too far in advance the noodles will dry out. If you cut the noodles right before baking the enchiladas will turn out like soup. It will still taste great but... Green enchilada sauce is the other key to the success of this meal. You are going to love it!
