This meal is a crockpot recipe - well sort of! You will prepare the Barbacoa Beef in the crockpot all day. Then later on tonight, you will cook up nachos with the meat. I do recommend putting the nachos on a sheet pan and baking them in the oven. However, you could dish it up on individual plates and cook the nachos in the microwave. I like the crispiness that the oven gives the nachos. But do what you like. As far as the Barbacoa Beef, if you like spice- be generous with the chipotle peppers in the adobe sauce. If you or your kids don't like spice maybe skip the chipotle peppers or only add a little bit.
