There was a period of my time my daughter was a super picky eater. She mostly struggled with meat. But she has always loved rice. I came across a fried rice recipe that she loved and it was so simple that it was a great way for me to use up leftover rice. I have added additional vegetables (of course) but it is one meal that we put on rotation. The key to this recipe is the butter. You seriously use a 1/2 cup butter- which is kind of evil but it makes this rice so irresistible. You do use a cup of diced ham, but if you feel like your family needs more meat, you could buy some frozen sweet and sour or terriyaki chicken to serve with it.
