Comfort meal is what this is. And it's easy and it is loaded with vegetables! The recipe makes two different chicken pot pies. You can waste ingredients or you can be a prepared Mama and make the second chicken pot pie or second chicken pot pie ingredients minus the gravy and pie shells. If you make the second pie, you would freeze the entire thing and then pull it out a day or so in advance of when you want to cook it up - or you could even cook it the same day you pull it out of the freezer - but cover with foil and double the cooking time. If you opt to just freeze the extra ingredients, the day you want to eat it you would prepare the pie crusts (exactly the same as you would today) and then you make the gravy and add the frozen vegetables to the gravy and dump into the pie shell.
