In 2019 as a family we went on vacation to Texas.  We went to Austin, San Antonio and the beautiful hills.  The food was absolutely fantastic.  In our family we had our fair share of breakfast burritos but we had never had breakfast tacos.  Our favorite Texas breakfast tacos had beans instead of potatoes.  I recreated that with this recipe.  I think another key is the corn & flour tortillas.  Straight corn tortillas don't bend without breaking.  You are in for a treat tonight!  Yee-Haw!
