The quesadillas that you will be making today are sooooo nutritious. In the meat you have red kidney beans, peppers, carrots, zucchini, onions and spinach. Not to mention the condiments of lettuce, spinach, onions, tomatoes, olives, guc or avocado and salsa. My 17 year old nephew was having my hubby help him with his truck the other day. I was making this recipe and invited him to stay for dinner. He ate the quesadillas up and then asked me why my taco meat was so good. He specifically asked me what was in the taco meat. I told him and he said, "This is why I have trust issues, people try to sneak vegetables in my food and I don't even know it". He ate another quesadilla after that comment and told me a couple of times how good this meal was. If you come to my house - you like my nephews, nieces and my kids friends - all should have the expectation that I am going to sneak extra vegetables into food. I take it as a compliment when people don't even notice.
