I first had taco soup on a cold Halloween evening at my sister-in-laws house. My only child, Riley (at the time) was invited over to go trick or treating with his cousins and as a bonus I got to tag along. I remember the pure delight in taste and then discovering the simpleness of dumping a bunch of cans of beans in a crockpot. Over the years I have added different seasonings and of course extra vegetables. This recipe is my absolute favorite. The dry ranch mix just gives it so much more flavor. Then paired with cornbread and honey butter this meal brings back so many wonderful memories of my life. I hope that you enjoy this meal and the 11 vegetables that are hidden in it!
